Our purpose is a devotion to staying true to Sicilian Italian culture, blending in American baking classics and preserving artisan pasta making. Our goal is to continue the refined art of hand made pastas using old world skills. These techniques have been handed down from generations in Sicilia and have continued especially upon the research of partnership owner and award winning author Maxine. The company started operating as Pensi Pasta in Monterey Bay by Evette Lecce. In 2023 Chef Ruby Selfridge of Ruby Cakes Monterey merged with partners Eric, Maxine and Sophia Carlson.
