Fresh pasta has a very delicate texture, it is one of the reasons that people travel the world for Italian cuisine. We use 100% semolina flour. This makes the pasta much more smooth to the palette as compared to dried. Fresh pasta elevates the eating experience to new heights. Many Michelin Star chefs will only serve their sauces on fresh pasta, the pasta texture, taste and color is truly an art form.
